Vegan Lentil Salad Pizza-serves four
1 cup cooked lentils
4 cups lettuce
½ teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon smoked paprika
Vegan Thousand Island dressing (Click here for recipe.)
Salt and pepper to taste
Pulse lentils and seasonings in a food processor until combined. Toast pitas in oven if desired. Top pita with lentils, lettuce, tomato, and dressing.
